    Such a shame this video doesn't get more views, Lucas is a joy to watch and is everything you'd want as both host and instructor; articulate to a tee and explains things in a way that not only remains interesting but also helps you understand the origins of the dishes.

    In about 48 hours this dude became my favorite chef of all time man. I really love that he holds down the culture but it’s so lax about it.

    Chinese American cuisine is an impure, "Mongrel" cuisine by its nature. It's the invention of the Chinese men who came to America to work on the railroads. Very few knew how to cook. Cooking was woman's work, and Chinese women were explicitly excluded from immigrating. So the origins of American Chinese food were in the attempts my no cooks to recreate the half remembered food they longed for in another world with different cooking tools and methods and ingredients. It was the unintentional invention of something new.
