One of my favorite things to cook and, of course, eat! My Sicilian grandma taught me how to make it when I was a kid. Her recipe is almost the same as yours except she didn’t use brown sugar or mint. It’s delicious with some crunchy Italian bread ... yum!

I love soft eggplant but I’ve never removed the seeds. Hmmm. Guess I will try that. What mint do u use? I grow mint and there are so many kinds of mint.

Brown sugar as opposed to white, lemon zest, and mint as opposed to basil. Never seen that before. Will it hurt the dish? I’m gonna say no.
Soak the eggplant 🍆 in milk 🥛 for 30 minutes NO BITTERNESS drain and dry UNBELIEVABLE had to stop myself from trying it over and over again
