  • Apple Pie Filling
You can use to swirl into cakes, as cake topping, apple crisp, as an ice cream topping and of course for pies! You will need to double the recipe for a deep dish pie
3 1/2 cups sliced or chopped apples tossed with about 1 1/2 Tablespoons lemon juice (This time I needed my apples chopped for the recipe I will use them in) Any baking apple is fine. I like to mix mine. I used Honeycrisps and Jonagold this time.
    1/2 cup water
    3 Tablespoons sugar
3 Tablespoons brown sugar (light or dark) If you do not have brown sugar regular sugar is fine.
    1-1 1/2 teaspoons ground cinnamon
    dash of salt
    2 Tablespoons butter
Slurry: 2 Tablespoons water, 2 Tablespoons cornstarch
Directions: Slice or chop apples as you will need to use them (slices for pies, chopped for toppings, etc.) Toss with lemon juice. Set aside. Melt butter in pan. Whisk together the 2 Tablespoons each of water and cornstarch. Set aside. Add to the butter, both sugars and water. Whisk well. Add cinnamon and dash of salt. Whisk well. Add the cornstarch slurry. Whisk well. Bring up to a boil. Add apples, stirring thoroughly. Bring apples back up to a boil. Continue to to keep apples moving and let them stay boiling for 30-40 secs. Turn temperature down to a simmer. Cover with lid or foil and continue as shown to let apples simmer 6-8 minutes approximately, until done to your likeness. If using for baking about 6 minutes. If using for a topping then go up to about 8 minutes. Remember to give them a good stir as to cook them evenly. Use as you would and type of pie filling. Makes about 2 1/2- 2 3/4 cups filling.Depending on the pie size you may need to double the recipe. The filling will keep in the refrigerator for about 3 days. If not using right away, just place cooled filling in a freezer bag. Hint: after filling the freezer bag remove as much air as possible and lay on a flat surface in the freezer. It is much easier to store it flat in your freezer. Freezes well for up to 9-10 months.
To make a pie using the filling: Preheat your oven to 425 degrees. Place a bottom crust. Pour cooled pie filling (room temperature is fine) into the pie. place a top crust (cut a few vent holes) or a lattice style crust on top. Crimp the edges of the pie dough. Brush the top crust with egg white. Bake for 38-45 minutes or until golden brown. You may want to use a pie shield or foil on the edges to avoid over browning as the pie bakes. I want to thank you for this. I purchased a bag of cheap apples while shopping for the quarentine. It is only my husband and I so not sure what I was thinking. I did not want to waste them. This was a blessing. I have them simmering on the stove right now. The fact that I can freeze them is another blessing. Thank you so so much.

Yum! I see people add cups of sugar. I substitute the sugar for stevia brown and white sugar and its way too expensive to add 2 cups per batch. I was so happy to find your tutorial!!! I do the same with all fruit I can. I remember crab apple jelly from when I was a kid and they added red hots. I can add a 1/4 cup red hot with the apples and stevia and end up with onle 10 net carbs with the apples I use (assuming each serving is 1 cup) I also make a keto crust which adds a couple carbs. I personally don't use crust for my serving but make it because everyone else likes it.
Thank you for posting this Hedy!!!

I'm having a hankering for apple pie! LOL. Well, I could just leave it at that couldn't I?! LOL 😉
I've decided to make mini apple pies using a muffin tin, I just needed a good recipe for inspiration. The thing is, the one I found calls for canned apple pie filling.. canned.. what is that? How is that a recipe? How does that even help me?! Lol.
So I thank you for this beautiful looking recipe of yours; the effort will be worth it, I know! Even if it were to take 1 hour instead of 10-20 minutes, it would still be worth it!

Plus I started making no knead SANDWICH BREAD due to prices in the stores .
So I dont want to waste these apples .
So i can use this right in my 2 pie shells ? They r frozen as i had fusion of my back from years of very hard working , well them messed up even survived sepsis.
6 weeks of IV Rocephin antibiotics.
But im here with a rolling walker trying my best at age 57 will be 58 ..

Yes you sure can. I apologize for my VERY late response. I have had several really bad health issues back to back to back all year. I just replied to you on the hash brown video. God bless you! You sound similar healthwise to me, I have unfortunately had sepsis 4 times. The first two times I almost died both times and was in ICU for about 10 days each time and both times completely out of it and don't remember anything. They could not believe that I bounced back. The last 2 times I knew what to look for and thank heavens it was caught while still in early stages. Folks do NOT understand how bad sepsis is. Once you have had it , they told me it stays dormant in the body waiting on ANY infection. My first 2 times was results of 2 kidney surgeries and blockages. My 3rd time was a gastrointestinal infection and the last time I had sepsis was due to pneumonia that I had as a result of gallbladder surgery in August 2021. I just put one foot in front of the other and I just push forward. What else can you and I do? Also, I am 1 year older than you, I will turn 59 in August! LOL Mrs. Tharp, nice to talk to you again! :D

    • @Hedy
      @Hedy  5 лет назад +2

Hon, there is no way for me to know exactly what happened. I need more info. You don't state at what time in the process that it turned "black". Before the apples? After? If using the ingredients that I used in the video, then nothing there would make it turn black. The only thing I can even think of that could possibly make it turn black would be having your heat too high or maybe a distraction perhaps? I would think it would have had a scorched smell. So I can only suggest that you start over again. I do know this is a great recipe that is over 85+ years old if not even older, directly handed down in my family. Again, there isn't enough information in your comment to help me to help you figure out what exactly did happen and when it went wrong. If you can walk me through your steps, then I would be happy to try and help you.

Making this today! You said to wait and see what you make with it...do you have a link to that video? I am curious!
Update: Uh, yeah. I made this. I will never use another recipe, and sure as the world...will never open another can of apple pie filling! 😍👍❤

The video of what I made afterwards, 3 segments did not film correctly, I indeed will need to reshoot that whole video. I would have reshot it at the time but I ended up getting quite ill soon after that so then I have never gotten around to do it, I will though! Thank you for asking about it honey! It gets in the back of my head, that I never redid that video. I am also SO happy that you liked it! It is why I make videos, to get folks to do certain things for themselves, not to open a package or a can. I am truly happy to know that you will always make your own filling from now on! You made me smile! :D

I am not a fan of canned... anything! I went a whole year once, cooking for my family after downsizing before I realized, we had lost our can opener in the move.
But, I had never made my own apple pie filling, until now.
If I had to give a contrast for people who haven't tried it, I'd say the *most* noticeable difference in the flavor of your recipe, compared to canned is: You cannot taste any preservatives and chemicals!!! And the cinnamon flavor with fresh apples, cooked down in the caramel syrup. Wow! ❤ It's such a shame that we have become so accustomed to the fake stuff that most will never, in their whole lives, taste the real deal.
Hope you feel well enough soon to do what you love again!!!
      Hugs from Texas!

Hi, i tried your apple pie filling recipe and my family loved it. The taste was perfect fit for us. I just want to know how long is the shelf life if it is kept in the ref? Btw, i am from the Phils and our weather is king of hot/humid most of the time.

I apologize for late response. (Bad health issues & so behind on comments) Thank you! Great refrigerator question as well. I somehow had not added that info, but I have fixed it now. It keeps in refrigerator for up to 3 days, it freezes really well for up to 9-10 months. I am SO happy that y'all loved it! It truly makes me happy to see comments like yours! :D

Do u need corn starch or no it’s optional

    • @Hedy
      @Hedy  4 года назад +4

In this case the corn starch slurry in my opinion is not optional. There are other slurries that can be made to thicken, but in this case you want a slurry that does not affect the color of the filling as it settles into the dish. It makes a nice clear thickener. There may be other ways that you might wish to explore, in my case I like to keep it quick and simple. I have made it this way since I was a teenager and I know that this comes out great as I made in the video. Thank you for a great question! :D

Yes, that was indeed a mistake. The full recipe and amounts are in the description box. I even had changed the title awhile back to reflect that. LOL
To directly answer your question the slurry is as follows:
Slurry: 2 Tablespoons water, 2 Tablespoons cornstarch
I sure hope that you try it and I would LOVE to hear back from you! Thank you so very much! :D

Thank you. Since I like to eat cheddar cheese with apples, I thought I'd grate some on top of the pie crust.
