I used this recipe today to make lemon blueberry muffins, turned out fantastic!! Just swapped orange juice for lemon juice and zest, and cranberries for fresh blueberries. Add some vanilla extract and ginger/allspice to amp things up!

My last one was fig lemon walnut! A neighbor brought over figs and I had no idea what I was going to do with them. I used them in place of the banana 👍🏼
These are delicious! I used 1/2 cup applesauce instead of the bananas and made a jam from some frozen berries to put on top instead of putting the fruit in the batter. They didn't last long here.🤗

OMG these are so good. Love all the extra bonuses with this, easy to change up (I used 1/2 cup almond flour in place of part of the oat flour and I used agave syrup as I can't tolerate dates), makes the house smell incredible and knowing these are healthy even when your mouth says they aren't. Going to freeze some for some easy grab and go when needed. I have dried organic orange peel. I know it's not the same as zest but my oranges are not organic and I was wondering if the dried orange peel could be used instead. If so, how would I figure out how much to use to equal one orange?

I dislike cranberries mostly because cranberries are sour so loads of sugar is added to products to make them palatable. I will therefore go with a blueberry - lemon variant We have two sorts of blueberries here: "Heidelbeeren" - European Blueberries (also called Bilberries in Britain) and "Blaubeeren" - American Blueberries I tend to buy the smaller Heidelbeeren because they are cheaper and locally produced. Good basic muffin recipe which will be suitable for afternoon tea which we have been having over the lockdowns with a cup of tea (or in my case coffee) at 4:00pm LOL
Britt, why does anything I make with oat flour come out “gooey”? Not totally but do you know what I mean? I love making oat flour and using it in your recipes but do I need to cook it longer/at a diff temp? I have an older oven like you so Idk if the texture is like this for everyone or if it’s my oven. I can deal with it just wondering if there’s a way, other than using a whole wheat flour with it, which I really don’t want to do.... help? Thank you for another wonderful recipe. I know it’ll be good regardless. I’m asking more for the sake of my husband who is not WFPB.
I feel u on that I used to always try to make pancakes with oat flour and it would always be kinda wet in the middle and it would make me wanna gag but I just use whole wheat flour and just wondering how come u don't like to use whole wheat flour?
@@ashleyashley9405 what I mean by added step is reducing the oat flour and filling in the rest with WW. I’ve done that with a few recipes including pancakes. Not sure if I should do that or just completely sub WW for oat flour?
@@angelhayes5166 well so far I’ve only done it with pancakes I only use WW flour and u HAVE to try it it comes out like regular pancakes but I probably will use it instead of oat flour all together cause it works so well it’s much better than eating soggy boogers

I saved some time and just used a potato peeler to get the zest off! Much faster… then blend in Vitamix with all the wet ingredients

A half cup of applesauce would be a good replacement in this recipe. Or pumpkin puree if you turned them into pumpkin muffins.
