I think Sweden only had those two aircraft for radar coverage. So they gave what they had. Maybe they have one or two more, but this was basically it, for now.
And yes, if the communication link works as in Sweden, then all F-16s will have on their displays what the Saab radars pick up. Directly and no delay. I see this, so all of my buddies see it as well. And what any of my buddies see, I see. This means you can go in close with the enemy, radar shut off so not to give away that you are there, and still see everything on your radar display as if you had your radar on. Because you get info from your buddies, who are further away, and radar on. Sneaky!

Afaik we were expecting delivery of the replacements so basically handed over "the old stuff" as soon as it made sense. And being in NATO and with improved Nordic cooperation, we anyway had coverage to what was needed in the baltics, especially around the temporary Russian exclave that is our main worry.

These planes actually out run figher jets! Think about it, they will see them far ahead of beeing spotted from enemy jet fighters. Therefore it's not that dangerous, they can just change course well before the enemy jets even know that they are there.
And of course these plans will be protected by jet fighters.

Swedens military budget between 2020 to 2024 went from 6 billion to 12 billion Euros.

The thing is, since this system is placed on the back of a very common small civilian airliner, Ukraine likely has plenty of civilian pilots and ground crew already qualified on it.
The operators in the back does the same work as a ground based radar and theatre command center and thus only need an interface familiarisation course to plug and play.

I know I watched another video once and they showed the inside of a plane and it had rows of reloadable countermeasure devices and the like, but can't find it right now - but I might also remember wrong and it could have been the newer GlobalEye or even the swedish sig-int aircrafts... but speaking of sigint I just saw this 100D is also equipped with a radar detector/receiver to pinpoint enemy radars which could be very useful I guess. (edit: ah probably saw the inside of the slightly larger SAAB 2000 ErieEye plane ruclips.net/video/xpogMKbXv3A/видео.html )

I don't think you quite understand the ranges and threats. What this thing can do is circle over kiev and see everything in the air up to moscow. It's not in any danger of being shot down. Even if it was targeted by big boy sams like S-400 (that have a reported range of 400km) it would have over 10minutes to get to safety. If the S-400 fired from max range of course. But there's no reason for an aircraft like this to get anywhere near the combat zone or any kind of danger.

These planes will surely operate inside of Ukraine, as far away from the front as possible, that being said, they do have countermeasures to avoid missiles.
It is also fairly difficult to hit such a slow target if you can't get a missile lock, as it goes very slowly compared to modern jet fighters. Imagine driving a F1-car, with a gun monted to the front, while dodging incoming missiles from all sides, and you try to hit a truck's engine as you are passing it. You might do some damage, but more than likely you will miss. If there is no missile jamming, or not SAM's or MANPADS targeting you, it will be significatly easier - however all these things are present on the ground in Ukraine.
Their mission will likely be to give early warning of incoming missiles and planes, and also coordinate strikes with F16's. The reasonign behind donating these is that Ukraine had no such capability, and this greatly enhances the way they can utilize their new and shiny western military gear.
