Ingredients:
NO BAKE CHEESECAKE
4 oz cream cheese
1 cup heavy whipping cream
5 graham crackers
1 TSP vanilla extract
2 TBSP sugar
Fruit of choice
Whipped cream to garnish
NECTARINE ARUGULA SALAD
5 oz arugula
2 nectarines
1/3 cup feta cheese
1/4 chopped pecans
Balsamic glazed
For the dressing:
1/4 cup extra virgin olive oil
1/2 squeezed lemon
1 TSP Dijon mustard
Salt & pepper to taste
CHEESY PESTO BREAD
French baguette
Pesto sauce
Italian blend shredded cheese
Butter
CREAMY SHRIMP SCAMPI FETTUCCINE
1 LB shrimp peeled and deveined
1 LB fettuccine ( preferably linguine)
4 TBSP of butter
4 TBSP extra virgin olive oil
1 Shallot finely diced
3 garlic clove minced
Pinch of red pepper flakes (optional)
Salt & pepper to taste
1/2 cup of dry white wine (I used white Zinfandel or use pinot grigio)
1/2 lemon squeeze
1/4 cup finely chopped fresh parsley leaves
1 cup heavy whipping cream
1 TBSP chicken bouillon
