Pumpkin Pie Gets a Serious Facelift

  • This week on Hit The Kitch, Molly mashes up two iconic American pies into one, creating the ultimate Thanksgiving dessert. Part Chess pie (but make it honey), part pumpkin pie, this pie has the best of both. With a custardy, jiggly texture, and deeply spiced gingery flavor, it has quickly replaced all other pies on her Thanksgiving table ! Another fun bonus point? This pie is also made with a buttery pecan crust which just so happens to be GLUTEN. FREE, which she only realized at the end of this video! If you want to bring a showstopper of a dessert this year, but don't want to be predictable, this is the pie for you. Salty, sweet, and best served with a dollop of unsweetened cream, the Salty Honey Pumpkin Pie is this year's pumpkin pie moment.
    INGREDIENTS:
    PANTRY
    2 ½ cups raw pecans
    ¾ cup plus 2 tablespoons granulated sugar
    1 ½ teaspoons ground cinnamon
    1 ½ teaspoons ground cardamom
    ½ teaspoon ground nutmeg
    Kosher salt
    ½ cup canned pumpkin puree (Libby’s is best)
    ¾ cup honey
    1 tablespoon cornmeal
    Flaky sea salt
    DAIRY
    10 tablespoons unsalted butter
    4 eggs
    1 ½ cups heavy cream, divided

    here's the written out version of the recipe -
    crust
    - 2.5 c pecans
    - 2 tbsp melted butter
    - 3 tbsp sugar
    - .5 tsp cinnamon
    - 1 tsp cardamom
    - .75 tsp salt
    - 1 egg white
    blitz in food processor. press into buttered pie plate, bake at 300 until dried out/matte/set. let cool for 5 minutes.
    ----------
    custard
    - .5 c pumpkin puree
    - .75 c sugar
    - .75 c honey
    - 1 egg yolk + 3 eggs
    - .5 c heavy cream
    - 1 tsp cinnamon
    - .5 tsp cardamom
    - .5 tsp nutmeg
    - 1 tbsp cornmeal
    - 1 tsp salt
    - 8 tbsp melted butter
    - 2 tsp grated ginger
    blitz in food processor. transfer to pot + simmer for 5 minutes, stirring constantly. pour into crust, bake at 300 for 30-40 minutes.

    I gave this recipe a go! I unfortunately underbaked the crust so it was kinda raw. Although my crust looked and felt baked after its par bake it was a bit soggy and not cooked through when I cut into it. I would definitely lean on the overbaked side for this kind of crust. Just because the taste of raw pecans was a little bit too sharp which really messed with the overall flavor. And yes this is a very sweet honey forward tasting filling with very strong hints of spice. Personally not my or my sister's cup of tea.

    As someone who hates pumpkin pie and a serious dislike of the culinary dish, this reciep has changed my opinion. I think i might give this recipe a try and allow punpkin pie another shot in my life.

    Gluten free for fellow checking in here (allergy) - appreciate pointing out this was GF, even if by accident. I have no doubt this is delicious - all of Molly's recipes we've tried are - but a half cup of pumpkin to a cup and a half of sugar (sugar + honey) is too far into sweet territory for me. I prefer a more savory pumpkin pie with a bit of sweetness. Those who like very sweet pies like pecan will probably love it.

      I was thinking about skipping the sugar and stick to the honey. I’m not sure if that’s going to mess up with the sugar/salt ratio, but I’m with you, this would be way too sweet for me.

    yo molly plz respond lmao - we're supposed to do pies tmrw & it was requested i do a pumpkin cheesecake type deal but i rly wanna try this recipe bc lots of GF members in the fam do we think i could do the pumpkin custard skip the cornmeal (maybe would need more egg yolks?) and then chill and fold into meringue and make like a pumpkin mousse and put that in a fully cooked crust and chill or is that wack?? ty luv u ❤

    Pie is in the oven now, excited to try it. Things that would have helped me on the way:
    * saying roughly how long to bake the crust for, in addition to the cues about matte and glossy. 5 min? 30? when do I first need to check it?
    * a visual shot of the pecans when you say "that's about right" for the consistency
    * a shot of what the pie should look like when its ready to come out of the oven

    Oh Molly did me wrong! The crust behaved nothing like the video, and didn't taste good either. It went in the trash can unfortunately. Love these videos but probably wouldst try another Bake 😮

    We attempted the pie twice on the same day. Neither time did it turn out correctly. I'm sure it was cook's error but not sure what we did wrong. Both times, it seemed like the pie separated. You could see layers on the side view. The top looked like melted butter, not in a good way. Probably won't try this one again. Congratulations to all those who got it right.

    love the idea of the pie but if the pie is so sweet that you need cream in every bite to cut through it, why not reduce the amount of sugar in the recipe?

    I made this for thnxgiving without honey and it was perfectly not too sweet!
    Also used roasted pecans and didn’t use cornmeal and it was perfect!

      Hi! I was thinking of modifying in the same way as you. Did you replace honey with more sugar or did you just end up only using 3/4 cup of sugar for the custard part?

      No sub for honey and no extra sugar. I honestly think anymore “sweetener” would have given me a cavity on the spot. It was perfect with just 3/4 cup sugar imo

    I love Molly's book and watched every video she put out at BA, but when the yt channel launched, I could not get into the unhinged vibe. I also couldn't watch with my daughter anymore because of the copious amounts of swearing. Really pleased to return and find a much more restrained vibe that still retains Molly's bubbly personality but with more focus on the recipes (and less people popping in and out of frame XD). Thumbs up on this new style of recipe content (that my daughter can watch again as well)!
