    Updated information for anyone reading these old threads. (1) It is no longer necessary to heat the lids before putting them on the jars. According to Ball, simply wash, rinse and dry the rings and lids. -- I wash, rinse & air dry as a part of my canning session prep-work. -- The heat from the canning process is all that's needed to get a good seal. (2) Sterilizing jars isn't needed when waterbath canning time is 10 minutes or more, nor when pressure canning. In these cases the jars are sterilized, as the contents of the jars are also sterilized during processing. It is still recommended to sterilize jars when waterbath canning time is less than 10 minutes. All that's needed is for the jars to be hot, especially when doing the hot pack methods for various foods.
    A FWIW.... I never put my jars directly into boiling water to heat them. Add the rack, water and jars to the pot. Then, heat all at the same time. This ensures there's no quick temp change that can cause stress in the jars. The more a jar is subjected to any kind of stress that accumulation of factors can lead to breakage.

    I almost didn't watch this video because I can a lot every year even our meat and thought I don't need 101 but I did learn something alternating the lids! Such a great idea. Plus the fact that I have watched every one of you're videos from the beginning. Every video you have made I give a score of 10.

    Fabulous idea about the lids. I lost a jar or two last year because i didn't realize i had two stuck together. The jars didn't seal properly. Thanks !

    You are a true delight to watch. Thank you for your information as I am new to canning. I have been wanting to do meats to clean out the freezers and just got an All American Pressure Canner on Ebay....got the 921 for next to nothing. Will you be showing pressure canning as well?

    I've been wanting to make cherry jam, but have been putting it off for fear of messing it up and not knowing what I'm doing. This video makes me feel brave, so I will give it a try tomorrow.

    Love your videos, very easy to follow. Just made pickle beets, they are in the steam bath right now. ..heee..heee. question please. Let say if I don't have a pot that big enough for the jars to stand up, can I lay them down. Thank you

      Laying them down is not a good idea, that could effect the seal of the jar and not can them properly. Having a kettle they stand upright inside and are covered with water is essential. Sorry but I want you to have the best canned goods!

    I love the lid tip, very interesting. I'm not sure if I missed it on the video, but how do I know when my pumpkin butter is done from the water bath?

      +Ihsan Deeb pumpkin butter is something I haven't canned. I recommend freezing it. Check the usda's canning website and see what they say.

    Great video! I grew up watching my parents can vegetables and grapes from our big garden, and it seemed like a big, hard process. Watching how simple you make it makes me feel I may want to try it later this Summer. Hmmm. . . :)

    The Gray Boxwood love mason jars I like to put peanut m&ms in them I think it's fun and festive to put Andy's in them. I make my own jams and those jars are amazing.

    You should do an update of this video! We all know you don’t sanitize jars like this by now lol
