@@TheWildYam Never had moose but i made jerky from a deer roast and it was the same as beef. But i also cooked a deer roast in tomato juice and didn't like it . Guess that's why i don't hunt .That combined with onerous gun laws .
Dang fine meal - Moose season jus opened and elk on the first of sept - hopefully be fillin my root cellar with canned elk or moose - since im off grid no big freezers - thanks for sharin you take care

I tasted Elk a few summers ago here in NM.... lots of Elk here. I couldn't tell any difference from beef taste, they say it's how you cook it, which it true for most game meats..... It sure is tasty, enjoy..! =)
When ever my grandmother(from Newfoundland) would cook wild meats - elk, moose, bear, mallard, seal flippers, deer, etc - she would marinade overnight in a red wine and salt brine to remove some of the gamey taste. Your meal looked really delicious.

It is less fat. Very delicious. You do not want to overcook it.

That is medium I would say. Best to cook to 140F. Too much more and it will be quite tough.
Jen, to maintain your knife edge, do all your cutting on a wooden board. Metal & ceramic surfaces dull knives quickly.
