doise and peddito were buddies, we don't know if peddito got possesed or something, and doise was just a little guy (probably on his 30's) that wanted to be just like the noise., in the boss fight, it doesn't seem like doise wants to defeat the noise, it seems like he wants to play with the noise, that would explain he not trying to kill the noise, its just him trying to build up a new friendship with the noise. after the boss fight ends, it seems like that the fight between his buddy (now possesed or something) took a while, since the devs expect you to replay the doise boss fight after you finish the story mode for the noise. but doise could be fine, cuz the noise story mode is just a little movie about pizza tower, meaning that was all acting.
Maybe his failures? With the way he fully dies when you defeat him once, and how he replaces noise's boss role, where he lost against 'pino, I feel confident in this answer. Edit: the way how doise doesn't have doiseys or doise bombs, may be another indication of him being the incarnation of noise's failures, as if he went bankrupt and couldn't afford those and just used boulders
