@free spirit you can make it without the gelatin/agar agar as long as you use a can of full fat coconut milk or cream. Place the can in the fridge overnight and scoop the solid cream on top of the can. This coconut cream will have a softer texture then if you add then gelatin.

You can use all maple sugar. I also added coconut sugar to balance out the flavors. I think if you only add 1/4 cup your pie won't be sweet enough, especially if you use 100% dark chocolate.
I haven't yet been able to test this recipe using egg substitutes but I think it will work since the chocolate also helps the filling firm up. If it's still too soft to eat warm or at room temperature, chill it for a couple of hours before serving. I would try substituting the eggs for aquafaba or flax or chia eggs. He always complains that it’s too sweet. I have never made it, because a whole pie just doesn’t get eaten. But this might work. One more question: how long does the coconut whipped cream last in the fridge?

I used salted by Kerrygold amzn.to/2XSoAKT - You can use oat flour but you may need to add a little less since it's more absorbent and drier.
