    Ingredients:
    For the crust:
    170g pastry flour
    50g maple syrup
    50g oil
    For the filling:
    200g soy milk
    40g maple syrup
    20g tapioca starch
    1/2 tsp agar powder
    zest of a lemon
    juice of a lemon
    1/2 tsp turmeric
    For the meringue:
    100g chickpea juice(from 200g chickpea & 300g water)
    70g cane sugar
    1/2 tsp vinegar
    1 tsp vanilla extract
    Instructions:
    1. soak chickpea overnight. boil with pressure cooker for 5 minutes.
    2. mix pastry flour, maple syrup and oil and bake it for 20 minutes at 350F / 180C.
    3. put all the ingredients of lemon custard and bring to a boil or until it thickens.
    4. whip chickpea juice, vinegar and vanilla extract until it forms stiff peaks. add sugar in batches.
    5. put together everything.

    「作り方」
    1、ひよこ豆を一晩浸水し、圧力鍋で5分ほど圧をかけます。
    2、クラスト生地の材料を全て混ぜ合わせ型に敷き詰め、180℃で20分ほど焼きます。
    3、フィリングの材料を全て混ぜ、とろみがつくまで弱火にかけます。
    4、ひよこ豆の煮汁、酢、バニラエクソトラクトを混ぜ、ハンドミキサーでツノが立つまで混ぜる。きび砂糖を数回に分けて加える。
    5、クラスト生地にフィリングを入れ、メレンゲを絞る。

      Lynn G Hi Lynn, it can be used as an egg replacer often. I use it as a egg in home made mayonaise. It can be used in baked goods as well. But I think Flaxeggs (linseed/flaxseeds ground. 1 tbsp with 3 tbsps water = 1 egg) are better in say pancakes and cakes.

    "I'm sorry this recipe isn't perfect" Shaddup. As someone who isn't vegan, this is ingenious and very well done. You work with what you have and, given that you're lacking the egg for the merengue because you're going for a vegan option, it's going to be harder to get fluffy peaks to stay fluffy and peaky when you hit them with the torch. Like you said, you'd need to add a lot more sugar to make it work, and it makes it too sweet for you.
    What I'm trying to say is, don't worry if the recipe isn't perfect. That's the beauty of cooking: You discover new things, and try new things, and see where it takes you. And as long as you enjoy it, damn the torpedoes.

    I love all your recipes, and while watching the way you whipped that chickpea juice to perfection I was really thinking "gosh he's a magician" - the little "fail" just makes you more human :D and it's not really a fail either, I'll be replicating this soon, when I move to France as I need to prove to my husband's family that we Vegans can have great Vegan tarts every Sunday of the year (they have one after lunch with coffee each Sunday, I can't wait to bring mine ;-) and this will be the first)

    Sprinkle massive powder sugar on top of the foam first, then blow torch it. The sugar will caramelize like creme brûlée while maintaining the integrity of the faux foam.

      madeline johannes yes!!! The sounds. I don't know why but they are like nails on a chalkboard to me. I love his recipes but if I don't watch them on mute, I get so agitated by this. And I remember the guacamole video making me similarly agitated from the noises.

    Here in the South (pretty much anywhere in the Bible belt) deserts are made with lard, heavy cream, eggs, butter, etc. Basically all the ingredients for heart attacks and strokes.
    But this looks good and I can't wait to try it.

      Absolutely none of your mentioned ingredients will cause heart attacks nor strokes...in fact, current research (not put out by a Gov't agency with an agenda) proves them to be healthy fats. "Butter Bob Briggs" on RUclips is one source of great info. Also many Physicians and specialists you can learn from.

    I love your videos; they're a nice break from the noise and chatter of everyday life! Also, I know it's been over a year (and possibly you've already found this out), but I've had that same juicer and if you place the lemon half in the other way you can get more juice.

    Great video! I think you should add VEGAN (and gluten-free when it is) to your titles for more views, esp. for meringue because it is a less common recipe in vegan. :)

    I want to add English Subtitles to this video where I just comment on how awesome this video is and when different sounds come on I add a subtitle for them, like when he bakes the pie I'd write 'beep boop' and when the water is being drained, 'drip drop' and when the maple syrup comes on 'shout out to all of you canadians.' and etc.

    I love all your cooking videos, I think you're so talented! Don't get discouraged about the meringue, trial and error is a huge part of cooking. the fact that your tried so many times shows that you didn't give up.     I love these videos! I'm interested in your use of the citrus press. As a bartender, I put the lemon half in upside down. The press gets so much more juice from it and essentially compresses the rind almost inside out. Thank you for so many beautiful videos. I always choose 'no music'. I like the sounds of your work very much.

    This is still beautiful! Everything you do is amazing and wonderful. Your channel is my absolute favorite. The food you make looks divine. The look and feel of your videos are so pleasing and relaxing. (I am sure they are created to be that way.) When I feel stressed, I come here and leave happy and craving some kitchen time to make yummies!!

    It's like peace in the process.
    Although is not "silent" if you know what I mean.

    I love your style! this was a great attempt. May I suggest you dust a lite powdered sugar on top and then torch just enough to get the burn effect without melting the meringues. Really cool presentation!
