We let it sit on the stove over night on Day 2 into Day 3. Low and slow for about ten hours, cut it off, let it sit. Re-heat day of and serve. Very yummy.

I'm also from Georgia, Columbus, and we do put baby lima beans in our stew but no potatoes. We also routinely add kernel corn and creamed corn along with stewed tomatoes and various spices. There is no right or wrong just different

Hey Daniel. This recipe is based, well exactly, from Oxmoor House & the editors of Southern Living. Been using it for years at a big "meat fest" and people love it. It goes quick. The book we found it in arranges smoking recipes by states or region. Interesting stuff, really. Anyway, I grew up VA and live in NC, where potatoes are included. The key difference from where we come from is using or not using the potatoes. Of course you can pull or pull-chop, but for us the big difference is the lack of potatoes. We grew up on Brunswick using potatoes. It makes a big difference to NOT use them. Changes the flavor profile, along with the smoked meat. It is rich though. :) Thanks for popping over. I liked it when I lived in NE Georgia but it had too much meat and not nearly enough vegetable. OTOH, I do have a bias for more veggies in stew.

I grew up eating brunswick stew at spiced right bbq and loved it...never was able to get it again though...might try this and see what its like

Yes. There is a 5lb smoked chicken in the stew along with an 8 lb pulled pork (shoulder.) Very smoky and sweet. Good stuff. 👍
