I've been using some techniques but was wondering what would be the best for this kind of designs where there are some soft edges (lower opacity) on the borders after masking out the edges of final design? Thank you!
For this specific design, I exported it as a PNG file. However, I know that exported designs can look different especially when using layer styles. I'm currently working on a video where I'll explain a technique that you can use to export your final design. Stay tuned for that!
Do you think to a certain degree, PowerPoint can also be used for replicating this design? I know there aren’t very many duplicating designing options on PowerPoint versus Photoshop but have you ever worked on PP to make any graphic designs?
I feel like PowerPoint doesn’t have the capability to create something remotely close to this design. It would be too much of a hassle and not worth it in my opinion.

for some reason when i select sky and choose the colors, it's black and white and not the colors you said

I would but I actually get them printed using Printify or Printful. I don’t print them myself.

I don't think the sky added anything. You can't see it
For me, it added some texture and an orange hue to the image that gave it a little grunge/vintage filter.
