There's a lot of sour cream and milk based products in our traditional food that a vegan would have a hard time, unless you went to a speciality place in a big city.

Leter C in cepelinai is pronounced like "ts" in "cats" and "ai" is pronounced exactly like "I" (a personal pronoun, not a small L). It's not a whole boiled potato but a dumpling made of potato dough. That cold beetroot soup is actually very easy and quick to make. You need only three main ingredients (boiled and shredded beetroot, sliced fresh cucumbers and kefir or sour milk), some herbs (spring onions, dills and maybe parsley) and some salt and pepper. You just mix all the ingredients and chill the soup in a fridge. Some add chopped hard-boiled eggs just before eating but it's not necessary actually.
