I think some things got lost in translation: he doesn’t want the Michelin rating because of HOW they’re rated. The problem with being rated a certain class and having to commit to staying true to that review is that you slightly lose your freedom to move your restaurant to a direction you want. Also like something I've seen in the comments already is that when the expectation isn't met because of a different taste in food since flavor appeal is very subjective but even though flavor is subjective. Rumors and reviews are taken at face value...

Marco Pierre White did something similar. Hes the chef that Gordon Ramsay trained under. A few years ago he decided to denounce all his stars. I think the reason why he did that was because he thought the pressure and stress was unnecessary so I’m sure this Korean chef had the same mindset.
Not all chefs want to be considered to be a Michelin-starred restaurant. Some restaurants/chefs want the Average Joe to be able to eat their food. There were a few restaurants with one or more stars that gave up one or all of their stars because the standards they have to maintain were just too stressful, and quite frankly wasn't worth it. The requirements for getting and maintaining a Michelin star is more than just the food. It's the overall atmosphere of the restaurant--- Food, service, cleanliness, etc. Also, for any restaurant, the rule of thumb is that if it's on the plate then it's edible---or at least it should be. Chefs shouldn't be plating something that is not edible.

IDK what Steve is on about but Michelin is one of the best performance tires brand around.
I use to order a burrito and a bowl at Chipotle and still could eat more.

I get it. It's kinda like tourist trap restaurants. Have you ever been to one of those places that have been on Food Network? The food is never as good as they make it seem. But they dont care because they were on TV and they haveba feature on trip Advisor.
I rather go somewhere that's good (Google reviews) that's off in the cut somewhere.
Michelin make the guide so people travel more and worn out their tire faster so michelin can sell more tire. that was the whole idea behind it.

1st is Michelin because they wanted people to travel and use their tires.
2nd they separated from the tire company and are the best critics of food in the world.
3rd is very political institution that has standards that are unreachable to common people with no support from investors that pay other critics for their review to even be considered for it. Unless your food is famous by itself is almost impossible to attain. So I see his point of him not wanting to be part of that type of institution.
If your place get Michelin-starred, you'll have to take the consequences that come with it.
Almost completely irrelevant, but Michelin, at least in terms of performance tires, are some of the best. The Michelin Pilot sport 4s and sport cup 2 are two tires that are offered on some of the fastest, highest performing production cars. The Aston Martin Valkryie, for example, comes with pilot sport 4s on the standard car and will lap almost any track just about as fast as an lmp2 car. So, in short, Steve is wrong.
Scelus he was way off, for years everyone knows Michelin is top of the line and continues to be. Not only by name but by actual performance and quality on all type of tires.
They use Michelin tires on Bugattis and high end sports cars lol
I wouldn't want a Michelin star either. The expectations and the food snobs would completely take the joy out of the job. I don't think you submit restaurants for Michelin and they just swoop in and judge your shit right? So it's unlike films or music where you have to submit films and music to be considered for the Oscars or the Grammys.
