I've been making these for awhile per Mr. Tidwell's instructions and they are the best chicken and dumplings I've ever eaten. The reason I'm here at the moment is that I'm making them for supper tonight at the request of my youngest son who describes them as his favorite food on the planet.

    Dear Hoyt,
Thank you for sharing this wonderful 'Ole Timey" recipe with the world. One of my favorite memories was helping my Granny Jeff make her homemade dumplings. She would cut hers into 1 inch strips about 6 -8 inches long. Then she would put her broom between two chairs and hang her dumplings over the broom stick until they dried out. Then she would cook them in a rolling broth. Can't wait to eat these for supper tonight with my hubby! They are simmering right now! Yum!! YUM!!

Thank you Hoyt and camera crew.

Hello Mr. Tidwell, I made these chicken and dumplings following your recipe and method. They honestly were the best I have ever made. At first, I wasn’t sure about the egg being in the dumpling and thought the method worked them to much. I was wrong, so glad I tried this. I won’t make them any different in the future. Thank you for sharing. God Bless

I made these tonight and they were delicious. I know he said don’t stir the dumplings with a spoon. I shook the pot as he did but I had trouble with them sticking a little bit. I think in the beginning I should have turned them down to simmer. Otherwise still darn delicious! My Grandma’s recipe was just crisco, flour, and cold water. I think the egg gives it more texture. It will be my new go to for sure!

Hoyt Tidwell's Chicken & Dumplings recipe. (Written out while listening to the video.)
    (Feeds 12 - 16 people)
    BROTH:
    3 Chicken breast
    2 Chicken thighs
    2 Chicken legs
    2 wings
    1 gal & 1 pint chicken broth
    10 chicken bullion cubes
    Chicken thighs
    White pepper to taste
    DUMPLINGS:
3 cups self rising flour (Martha White)
    1 cup water
    1 egg
    1/4 cup Crisco
Boil the chicken and pick off the meat from the bone. Keep in the fridge until the dumplings are done. Use the broth for boiling the dumplings. Bring broth to a boil in a large 2 gallon pot.
In a large mixing bowl, mix the dumpling ingredients with your hands to make a dough. Add more flour as needed to get the right consistency. The dough needs to be thick.
Divide the dough into 4 equal parts and roll into a loose ball with your hands. Press one ball onto a floured surface & roll it out flat and thin with a rolling pin or pastry roller. You should be able to see the working surface through the dough.
Using a pizza cutter, cut the dough into strips about 3/4 inch wide. Then cut the other way to make 3/4 inch squares.
When broth is at a rolling boil, add 1/2 of the dough that's already been cut to the broth, and shake the pot. Don't use a spoon to stir. Add white pepper.
As you begin rolling the next dough ball, keep an eye on the broth & shake the pot occasionally. As it comes back to a boil, add more dumplings; shake the pot each time you add more dumplings.
Repeat this process of rolling, cutting, shaking and adding dumplings until all the dough has been made into dumplings and added to the pot.
Turn the heat down to med low and cover, and let them simmer about 45 more minutes before adding in the chicken.
Tip: These will thicken up over time. Eating them right away, they will be thin and soupy. Make them earlier in the day & let them sit covered on low to thicken.

Is the broth from the chicken you cooked first, and how long do you boil it? Do you skim the fat off the top after its cooked, and then add the bullion cubes? I'm from up North in New England (Mass.), but live in Florida now, and we never cooked these. I want to try and make these because they look so good. Also If you could show your recipes when done, and you tasting them that would be great! A lot of videos I see from people show them trying their recipe when its done which I love to see.
