IRISH MASH POTATO Pastry APPLE cake. More a pie than a cake really. . .

  • The Irish Potato and Apple Cake, often referred to as a pie due to its structure and components, is a traditional Irish dish that combines two staple foods of Ireland: potatoes and apples. The dish is a unique blend of sweet and savory flavors, making it a versatile recipe that can be served as a dessert, snack, or even a side dish.
The "cake" is made by encasing sliced apples in a pastry made from mashed potatoes. This pastry differs from typical flour-based pastries; it's denser and has a unique texture, thanks to the potatoes. To enhance the flavors, the filling usually consists of tart apples, sweetened and spiced with sugar, cinnamon, and sometimes lemon zest.
To make this dish, the mashed potatoes are mixed with a little flour and butter, creating a dough-like consistency that can be rolled out to form the bottom and top layers of the pie. The apple mixture is then placed between these layers, and the pie is baked until the apples are tender and the pastry is slightly golden.
The result is a dish that marries the comforting, earthy flavors of potatoes with the sweet tartness of apples, offering a unique taste experience. It's a testament to the resourcefulness of Irish cooking, using simple, locally available ingredients to create a hearty and delightful dish.
Serving this pie warm, often with a dollop of whipped cream or a scoop of vanilla ice cream, brings out the best of its flavors, making it a comforting treat, especially during the colder months.
Despite its simplicity, the Irish Potato and Apple Cake is a cherished recipe that showcases the ingenuity of traditional Irish cuisine, providing a delicious way to celebrate the country's culinary heritage.

My mum used to make a wonderful dish she called Potato Lemon cheesecake....it consisted of a layer of shortcrust pastry in a flan tin, spread with jam then a mixture of mashed potatoes, sugar , eggs and lemon zest and juice was spread on top before baking...and then chilled overnight in the fridge.....it was very special .I have never come across anyone else who knew this recipe....I recommend it highly.

I eat potatoes nearly every day. I've seen all sorts of recipes that uses potatoes eg bread & flatbreads (awa as a base for fillings to go inside) & mash potato is a great was to thicken sauces, stews, curries & soups instead of using flour. Now I can put potato in pastry too - excellent. Thank you for a very unusual take on a classic recipe. And thank you South America for the gift of the potato.

The potato shell held perfectly, nice and stiff, but the apples fell out, so gotta figure what is it that keeps a regular pie from falling out like that. Maybe you should have let it sit and cool longer ?? Or is there an ingredient that should go into the apples to make them hold together ?? But no matter if they slide out, the pie seems delicious. I have no complaints .

Loved this But I wonder if I could use in a traditional deep pie dish with top and bottom crust? I’m afraid of using springform pan!

Yes indeed! I would imagine if you serve from the dish no problem. I think turning it out would be, The pastry is very soft. Thank you. Best, Rik

How do you make the lovely curry sauce (not curry paste) that you buy with your chips at the local take-away? I asked how it was made and was told they use about half a dozen spicy ingredients, but also including butter. Chips just aren’t the same without curry sauce!

A triumph! Potato pastry isn’t something I’ve run across before. Do you know whether the potato was used by preference, or to conserve wheat flour, or to use leftover potatoes, or something else?

I know I'm very late on this so don't know if you will see it. Potato Pastry was also a big war time recipe here in the states, along with Potato Bread and Potato Candy. I've seen it used to make Pasties (hand pies here), sweet or savory, but was also wondering if it is ever used to make a Galette, sweet or savory? Or is it too soft? Shirley in NH
