    the tradeoff between handlebar height and side to side handling was really helpful!

      Its one example on how think about your setup, but for sure something a lot of riders overlook.
      Usually at the bike shop they will set it up at the highest ( or almost ) position for maximum comfort, but you can definitely try different setting and see how they feel.
      The best thing to do is change a setup, go ride a trail you know and repeat - try noticing what felt best without overthinking it.

    On a mountain bike we want to move easily... so wouldnt it make sense to always have the handlebars at the lowest setting? Or as low as makes sense according to thr persons height etc

      Yes, we want to move easily... on the other hand if you're riding in a very uncomfortable position for hours - you will eventually not move so easily :)
      So the point is to understand what a specific adjustment does and find the best compromise for you.
      So you can slam it low and if it is comfortable just keep it there, or go up incrementally and find your sweet spot.
      That logic is true for all other adjustments.
