Thanks so much for your recipe for the quail eggs. I have too many quail eggs so i need to try pickling some. I too cook mine in my instant pot. I have a problem with bits of the egg white comming off while pelling, is this a reason for rejecting the egg? I cannot get to the eggs to stir the water in the pot. What to do?
If you'll be eating the pickled eggs within a week or two, broken whites aren't a big deal. If you plan to store the pickled eggs for longer, use eggs with broken whites for something else, as this does increase the risk of spoilage.

Is it recommended to dispose of the brine after eating all of the eggs in the jar? I’m guessing reusing the brine is not advised?
Personally, I have reused the brine (using it a total of 2 times). I wouldn't, however, if any of the eggs leaked yolk.

Do you put the cloves into the mason jar after funneling?
I personally just put them in the brine and ladle the brine into the jars. I stir before scooping up brine, so I get a mix of the seasonings.

There are no safe ways to make shelf-stable pickled eggs at home. Store pickled eggs in the fridge.
