Great suggestion to not worry so much about the shape of natural caves :D I recently have been doing sorta the same thing set up a few rooms or a few little scenes in the middle of the table some are for encounters they may get to and others are things they may see that are not encounters , but are fun to use some of my terrain. this way we can theatre of the mind the non encounter stuff or the simple encounters and just have what I need on the table :D

Years ago (just after dinosaurs ruled the earth), I remember when D&D first came apon the scene. It was new and it had as it's most loudest aponants, was the extreme religious right. They were claiming that playing the game could make you go insane or start worshipping the devil. This was especially after the movie with Tom Hanks came out. I'm glad to see you still have your sanity, and there are no alters dedicated to you know who.
I’m part of a few D&D Facebook groups and seeing people set up whole maps was one of the most discouraging things I saw when I started out. I felt for a long time that that is how I needed to approach my maps, but I didn’t have the space or money to pull it off. They make no sense for the reasons you specifically. Honestly most of the times it is a way for people with way too much disposable income to humble brag how many metric tons of Dwarven Forge they can afford.
So... We should set up the whole map? ;)
