നാവിൽ രുചിയൂറും പച്ചമാങ്ങ കാരറ്റ് വെള്ള അച്ചാർ/Kerala Style Mango Carrot Pickle

  • Ingredients
    1. Raw mangoes julienned 500gm
    2. Carrot julienned 500gm
    3. 250ml sesame oil
    4. Fenugreek seeds 1/2 tsp
    5. Mustard 1 tbsp
    6. Garlic cloves 100gm
    7. Sliced ginger 100gn
    8. Sliced green chili 50 gm
    9. Curry leaves
    10. Turmeric powder 1/4 tsp
    11. Asafoetida powder 1/2 tsp
    12. Mustard powder 1.5 tsp
    13. Fenugreek powder 1 tsp
    Method
    Raw mangoes julienned 500gm
    Carrot julienned 500gm
    Salt to taste Mix it well and keep aside
    Heat 250ml sesame oil then sputter
    1/2 tsp fenugreek seeds,1 tbsp mustard
    Then add 100gm garlic cloves and 100gn sliced ginger
    Once it becomes light golden brown color add 50 gm sliced green chili
    and some curry leaves
    Add Turmeric powder 1/4 tsp
    Asafoetida powder 1/2 tsp
    Mustard powder 1.5 tsp
    And fenugreek powder 1 tsp then mix well
    Then finally add sliced mangoes and carrots then mix well on a low flame
    Check the salt add if needed.
    Here I am not adding vinegar because the mango has enough sourness. And I am
    advising you to make a small amount of pickle when you are preparing it
    because we cannot keep it more than one weak it may get spoiled.
