Well did you just show it to him upfront? Or did you sneak it behind him when he didn’t notice? It’s not the cucumbers that scare them per see, it’s the fact that something in their immediate surroundings changed without them noticing, and because of their nature as a lonely predator they liken the cucumber to a snake that has creeped up behind them and just want to get away from it as fast as possible, and while it is funny at first, continuously scaring them like that may cause them to develop PTSD and too much stress.

This is hilarious! Makes me wonder if cats have an instinct to be afraid of some natural enemies that cucumbers happen to look somewhat like, maybe snakes or something sneaking up on them. Mine doesn't react fearful to shoes, bananas, or sock puppets that I've tried, but cucumbers and sausage it does every time!
I think that's exactly what it is... the common denominator in most of these videos is that the cat is eating, which is when it's vulnerable, and it turns to find that a long green snake has been sneaking up on it...
Yeah, it's an instinctive response, left over from their days in the wild.
I think this is common behavior to all animals with frontal sight, you would also jump scare if you turn head and see something uncommon very close, cat are simply similar with less things then human, they typically they don't see cuccumber on floor isn't?

3 weeks ago my cat almost died from stress even though I never try to startle him & he has a lovely cushy life! The er vet told me cats are naturally startled easily--his urethra had spasmed & completely closed up from stress & he would've died within 12 hours from burst bladder. I wouldn't add to a kitty's anxiety by pulling mean pranks on them. Just try to understand this awesome little creature & meet them where they are & accept how they are made please!!😥♥️
