I love this channel and every single recipe shown on it!.. but if I don't have time to cook, I don't have time to put it in the oven for 20 minutes after 5 minutes of prep. Lol other than that though, this is pretty perfect for a quick, pretty Sunday breakfast.
Nice recipe, I do this sometime but cut a large amount of soinach and use about 2 or 3 eggs to make sure I do eat greens. I call it my peculiar omelett because it contains most ingredients use in them. I cut onion, spinach, chesse any kind and 3 eggs and mix it in a bowl. To cook it on a pan just like you have done. You should try it sometime. You can add just about anything you want, like tomatoes, carrots, mushrooms or what ever you like. It ends to look like a cake but is made of veggies. I love it and it takes few minutes to make.
