He was doing it right but probably rushed it too quickly. You gotta let the pork render out slowly to extract the fat, there should also be garlic in there to perfume the pork

I’m a Carlos fan from his days at McLaren, but love these two together and cheer for Scuderia Ferrari now. Watching these two cook reminded me of my late husband. No matter how many times I wrote the directions out and showed him how to make cacio e pepe, he never could remember to save the pasta water and get it even kind of close to how it was supposed to turn out. I am more like Carlos and don’t heat the pan until my mise en place is neatly arranged. Their suitcase packing and cooking styles SOOO reflect their driving personalities!

So then, what did we all learn? If you go for dinner at Charles’s you will be served quick, but the food will be crap…..plenty of time to order a pizza before you leave. If you go to Carlos’s for dinner, be prepared to wait, don’t go already feeling hungry…but the food will be great. Carlos gets a Michelin star, Charles gets a puncture!
