I have much to learn before attending something like this. I rewatched that slam several times because of how satisfying it is. Even if an opponent did it to me, if it's to show their tsumo into a yakuman, slam it. I applaud you.

As a new player when I draw a new tile why can't I put it into my hand before deciding what to discard? This helps me to see what shapes I have and what to cut next.

Great question! This ultimately goes back to curtesy of the other players in the tables as they also need to see from where in your hand you discarded a tile. This goes back to potential cheating tactics as well!
You can avoid this by placing the tile on top of the tiles already in your hand as a way to still have a way of figuring out your way while also being mindful of the players. The more you play the easier it will be for you to figure out your ways without needing to place them in your hand!
      Good luck^^
