Awesome Kevin! The best Macarons I’ve made is Apple Pie Macarons I think. Shells with a hint of cinnamon, then the filling was an outer circle of vanilla creme patisseire, and in the middle finely diced apple that was sauted in a pan with butter, sugar and cinnamon 🙂

I usually think of a recipe in a day and then I finalize it when I put the idea into the liquid form. Sometimes I need more time to finalize it and sometimes happens that I nailed it right away 😃

Buuuuut, I just completed “Don’t throw my Love away” and it was vinegary. What can I do to help with that? I’d like to try again before I resolve to designating my strawberry shrub to salad dressing. 😂Please help! 😊
Hi! You can add some lactic acid to the shrub to tame the harshness of vinegar. Also, you can use less shrub and add some lemon juice too. Let me know how it turned out! Cheers!

I also took the left over strawberries and did the sugar process. I added that to the existing shrub. You can taste more strawberry and less vinegar now. I plan to get lactic acid for the future. You can also infuse strawberries into the Lillet. You will get more strawberry flavor in the drink which might put ricotta to the back but you will also get a more pink color.

if you wanna make macarons and succeed, I highly recommend Bake Toujours youtube channel! She has an amazing french macaron recipe that has yet to fail me :) Ps: Letting the macarons rest overnight in the fridge after filling them is essential to having the hard exterior and soft interior textures since the moisture from the filling softens the macaron shells during that time. If you don't, you end up with a very crispy macaron
Another banger of a drink! Will try! I have never made macarons but I frequently make quick ricotta at home. I use 2L of fresh milk sheep or goats milk (cow is also fine if you prefer), 1tsp salt, and around 100ml of vinegar or preferably fresh lemon juice. Just heat the salted milk and add the acidic component right before it hits a boil, turn off the heat when it does, strain the curds thoroughly and enjoy. I wonder what result you would get if you curdled the milk with some lovely leftover strawberry shrub!!
