Pickled red onions are an easy way to brighten and elevate any dish. They add a nice tangy and crunchy element to your meal and are so easy to make. Once you try it, I guarantee you will always want to keep a jar of it in your refrigerator at all times.

I made this on day 1, on day 3 I ate them all.
I am the same way. I make them about once a month, and add them to everything! Cottage cheese or fresh-made potato salad especially.

Yes! I also add ginger rounds and additional "seed" spices. A favorite is black mustard seed.

I use vodka, water, sugar, salt, and a water seal jar. I prefer lacto-fermentation over vinegar.
Dumb. Vodka harms bacteria in lacto-fermentation. Look it up.
Use the red onion skin for a sleep enhancer. Just pour hot water on them and let it sit for 8 minutes. It won't taste like onion. Add a bit of honey. You'll sleep like a baby and wake up refreshed.

You can just eyeball the amounts with the onion, garlic, jalapeno.
As for the vinegar, use a vinegar that is labeled as 5% acid. You can dilute equally with water if you dont want it to be strong, but pure vinegar will do a better job of preserving. She boiled her vinegar before adding it, which will allow the onions to be ready in just a couple hours, but you can also just use room temperature vinegar if youre willing to wait at least 24 hours. Store in the fridge and it'll be good for at least a couple months.
Not sure if she added sugar or salt, you can if you want but its not necessary, but hey its up to you if you want to try it.
For some reason onion and garlic give me a high lol ! I love them so much raw or cooked !
Eating them raw maybe gives you that same kind of “high” that comes with eating REALLY spicy foods lol

Water 1/2 vinegar, sugar, salt, seasonings/aromatics (E-Italian, peppercorn.) Boil.
Thinly slice onion, crush garlic, jar. Pour brine overtop & let sit

@@Deebo99The water/vinegar ratio seems to be 1:1, so you’d use a full cup of each and yield 2 cups of brine. I was likely just halving the recipe, but even if I did only use a 1/2 cup of vinegar, it still turned out great 👍
Why was her vinegar yellow? Is that a different type of vinegar?
@@shanuu7102 Yeah, she used apple cider vinegar, which'll have a yellow/orange tint. I used ACV too. If you're unsure about which vinegar/s you should use, I recommend experimenting with itty-bitty batches to see what you'll prefer.

It keeps well in the fridge, so make bigger batches if you use it often. I like it even better after a week or so.
I do this and put them in old pickle jars. Then I water bath can them for 10-15 minutes. Once the jars seal, I put them on the shelf.
How long does it last if yoy put in the refrigerator?
Atleast 2 months. Especially if you don't put your fingers or hands inside the jar and always use a clean, dry spoon. Also don't keep them out of the refrigerator for a long time.
I water bath can mine and they can last years on the shelf, in a cool, dark place.

Why would you bring apple cider vinegar to a boil? You just killed all the beneficial compounds in ACV. Just bring to a warm temperature so the salt dissolves and then add the vinegar and add it to the onions.

Sugar is the worst thing to put in pickle
We use habaneros instead of serrano for that extra kick and add a little bit of oregano
