Great tips!
OK, I gotta admit I was skeptical. I'm 50 yo and have been making scrambled eggs forEVER. I just tried this method and was totally blown away. It's like an entirely different dish. Seriously rich and luxurious. Crazy good! Never cooking scrambled eggs the old way again. Thanks, Gill!
So many people misunderstand food as something that you just _do_. Food is something that you create. Paying attention, that's where the love comes from. That's what makes good food, taste great.
Beauuuuuuuuuuuuuutifully said !
Gill, thanks so much for sharing! You are one of my favorite persons from the early River Cottage series!
Simplicity itself. Can't beat that! Thank you!
Tried this technique and it turned out perfectly 👍
TRULY AMAZING AS ALWAYS
my aunt taught me the proper way to make scrambled eggs when i was younger and i've never looked back. for my take on it though i do use a dash of milk and a mixed salt seasoning when i whisk the eggs and i also use butter in the pan before i put the eggs in then if i'm feeling gluttonous i'll add a small dash of cream when they're done to make then extra creamy.
Der Kommandant seems you care though, otherwise you wouldn't have taken the time out of your sad existence to write a reply to my comment.
Der Kommandant Thank you kindly, Der
I just went out and bought pastured eggs, cooked them just like this, then listened to Medicine for the People. It was a much needed experience. Thanks for the recipe.
Nice eggs Gill. Thanks for the tips.
Excellent scrambled egg recipe. Thanks Gill
I'd keep them on the heat a bit longer as those are too undercooked for me, but Ive never tried cooking them with butter, always been milk. Might give that a go.
just absolutely nails it. bangin'
Almost perfection! Try ground white pepper instead of black the subtle difference is incredible.
Perfect 👌
excellent tips, thanks
Beautiful :). I agree totally with your video - this is the only way to cook great scrambled eggs. Never use the microwave. The eggs taste SOOO creamy this way, even with no added cream.
Your the best Hill
Low and slow always. There are many variations on what to put in, or on, scrambled eggs, but just do it S-L-O-W-L-Y.
I like to throw some grated Gruyere in towards the end, sometimes some chives or spring onions, a bit of creme fraiche, and if it's near Christmas, top it off with some smoked salmon. But on their own is just fine.
The seasoning hint is good to know. I do like my eggs to be far more dry than yours though. Are Free Range eggs, organic as well? Or is it safer, as I am in the US, to go with organic every time?
Shouldn't have watched this in the morning on an empty stomach. I'm craving eggs now. Great tip I will give jt a try.
Agree scrambled eggs are amazing.
I've overlooked eggs for most of my life and then I stopped overcooking them: it was a revelation, now I love them. Thanks for these tips, I see this preparation more adapt for a dinner or a brunch rather than for breakfast but I'm going to try it as soon as possible!
Hungry now!!
I want the video back... from when Gill made the four butter rolls - it has disappeared. It was together with the making of the bread loaf.
Gill Meller is my preferred RC chef.
gonna try this, will top mine off with chopped chives.
I've done it wrong my whole life, but now that I know better I will do better. I'm pinning this. :)
I feel like scrambled eggs are completely subjective, like I personally grew up with scrambled eggs were fried little brown bits of eggs stirred with whatever stuff like huge chunks of cooked tomatoes (but people would probably argue that they're burnt. I just like crispy texture of little pieces of fried egg instead of a monotonous creamy texture when I bite into it). But hey, to each their own.
I going to throw caution to the wind and try this technique. Thanks!
Only change I would make is I would use olive oil on the toast because of all the butter in the eggs, but even that is such a minuscule change that it hardly matters. Great video!
I await the comments saying the eggs are undercooked.
Last time I made scrambled eggs for someone they couldn't wrap the head around the fact that scrambled eggs should be creamy and not a hard lump... they wouldn't even try them, they were perfectly cooked.
The scrambled eggs are undercooked. :D
the eggs are undercooked.
I think the whole "Eggs must be cooked this way" thing is just tosh. I like mine more cooked than this, I prefer the texture and flavour. Some people think what I like is rubbery and disgusting. The same way I love rare steak and some freaks like it cooked through. Each to their own :)
Christmas Crustacean As with all things, how one likes their scrambled eggs is personal. I'm sure sloppy eggs are just fine - and I have had "correctly" cooked scrambled eggs, but I don't like them and prefer mine done a little longer. If it still looks gelatinous, I don't eat it. There is no right or wrong way.
Pretty much perfect eggs for me. Just too much butter for me. I just want the fat enrich the flavour, I don#t realy want to taste it through.. If that makes sense to somebody ;)
But consistancy was perfect for my tastebutts!
Use a spatula! USE A SPATULA! USE A SPATULA! Sorry, did I mention using a spatula? Perfect scrambled eggs though, when I cook them I actually start with the eggs in a cold pan. Takes about 10 min, but boy is it good!
"Use a spatula! USE A SPATULA! USE A SPATULA! Sorry, did I mention using a spatula?"
Why?
Becuase flexible spatulas are so handy for things like this, using a spoon makes it awkward (I know, I'm weird)
Nerd..
I prefer to use a saucepan rather than a frying pan for smaller, nicer kernels
I love scrambled eggs. Now I just need some top notch free range eggs.
4 eggs for breakfast might be too much for me and you totally need some freshly grated nutmeg for that incredible extra flavour.
Note: it's a recipe for two persons!
great but can you show how to cook indomie (2 minute noddles) next??
How I love the world when people argue about how to cook eggs, wft ...........................
Surprised he didn't do it in a bain marie.
I never premix my eggs,I throw in when the butter has melted & away you go.
Not enough butter
no non
gordon ramsay insists on a high heat for five secs, remove pan from heat then stir, repeat
I'm allergic, unfortunately!
No one cares, fortunately!
I hear that chickpea crepes make an awesome egg-free omelette style preparation. :)

Food allergic folks need to stick together. :)
Too much butter, just a knob of butter and some double cream is perfect, add herbs/stock and you're on to a winner. I love ketchup with it too
All the way to the end of the video I was sure it was gonna say "April fools!". I'm kind of disappointed now.
