Geography&Mathematics: Geomatics essentially encompasses the other 4, as they are "focuses". Geomatics is the engineering (problem solving) of "where", and those focuses are solutions to solving that problem. Geodesy regards solving the gravitational potential of a given body, which can be used for locating/position. Surveying is using measurement tools to physically locate/relate the object space to the real-world environment. Photogrammetry relates common photos to create an object-space.

it is really civil engineering because they deal mostly with lands & logistics by it. By the time you get a job, you'll end up using less than 1 % of what you studied. The same with every field.
Essentially yes, however, there are different map projections that are usually used for representing large areas. Conical, Azimuthal, Lambert Conformal etc. are all different types of map projections that preserve different aspects of the map (ie, distance, shape, etc.). It is through multiple different projections that you can measure different aspects on a large scale and preserve certain qualities. I am currently only halfway through a degree in Geomatics Engineering at the University of Calgary, so I hope this helps.
