On PlaySi can change the Keybindings.I click in the Button in the setting, the PlayStation Keyboard-Windows pops up, I press Enter and then after that, the next button that I press on my own keyboard will get selected.Maybe works the same on Xbox.
Not sure if I seen, disable menu transitions?

"Disable Third Person Camera Interpolation" should be ON (meaning interpolation disabled), not off (meaning its enabled).

in 4k hours I gotta say the best settings are not changing any settings besides 2 or 3 x harvest depending on wether you have a job or live off of ssi
