  • Repairing damage and shaping the edge - Norton Crystolon Medium silicon carbide stone
    Refining the scratch pattern and reaching the apex - Sigma Select II 1200 aluminium oxide stone
    Polishing the edge bevel and experimenting with different finishing techniques - Suehiro G8 8000 grit silicon carbide stone
    First time trying the G8 stone - I am sure I can refine my technique to obtain even better final edge.

    Beautiful beautiful just just beautiful Stefan Wolf, so enjoyable watching you sharpen and polish that blade, that's a hell of a blade, wow.

    The g8 is very different when it is glazed, versus conditioned. I haven't decided which way I like it best. Glazed it feels hard, and glassy, like a Shapton Pro 5k. Conditioned, you get that silky smooth feeling you described. Both have their perks. Look forward to seeing you use this one more. I rarely take my knives this high, so it doesn't see much action, on my counter top.

    I have a friend of mine who uses only sigma select and he was telling me that they are his favorite stones. So I was very surprised when you said that they can't sharpen that steel.

      idk which one he has but it definitely can. The SG2 especially in such a thin knife like this one is not hard to sharpen at all. Any alumina stone, even hard non friable stones, handle it with ease, even in blades which are not such lasers like shibata. Anyhow, some of the sigma select 2 are green silicon carbide, which is the hardest non diamond/cbn abrasive that exists, and some of them are ceramic alumina like anyone else say shapton. Either will cut this steel. I only have 2 sigma select stones. 240 and 1k. Both are green silicon carbide. I considered to get the 3k also, but I understand that it is alumina and I already have too many stones like that.

    Nice job! The edge seems to have a 23 degree + or - angle. I bet you could easily get it down to a 12-degree edge, it would be more fragile but with a 20-degree micro-bevel you would have that blade screaming sharp.

      Being a loaner I approached it conservatively with durability in mind.

    I have a beginner question. How do you know which exact angle to hold the knife at?

  • @simonwells6977
    @simonwells6977 4 года назад

    Wow! Thank you. Small question Stefan. You were not using your usual plateau technique? Why all the edge trailing strokes? To remove any burr? If that is so you were in effect stropping on the g8 stone?

    • @stefanwolf88
      @stefanwolf88  4 года назад +1

      The G8 is medium hard to soft stone so I tried not to dig into the surface of the stone and in the same time to minimize the burr if such was raised.

    I just received 4 knives vg10 with damasc steel with a lot of chips. I will have to work a lot to fix them.

    You had something a particle or something making a sound on the last stone as said earlier mate. Other than that looks good 😊 ive thinned mine a good bit and lowered the angle and never had one chip in it. And i use poly boards. Must have been a little stone or something like sand

      First time using cleaning stone ever (usually just lapp with DMT plate) - grit contamination sounds probable. Nevertheless the end result was usable. I put in my christmas list Kotetsu Bunka in R2 :)

      Heavily influenced by Plateau Sharpening, he didn't create a burr so no need of using strop

      @@RubricoA. I use a strop loaded with some polishing wax not only to remove the burr but to also polish the edge.

      @@DanielWorkshop I use also strops with green compound. It works really well for me too.
      His sharpening method is similar to Cliff Stamp, check the link below and look at question 3.

      I can't confirm nor deny his statement that stropping can degrade the edge but it has a benefit for me in my experience.

      @@RubricoA. Same here. From my small experience in sharpening, I see that with the strop it is very easy to get from a sharp blade to a super sharp blade. :) But as you said is just my opinion. :)

    I'm fairly sure the grit contamination from the Suehiro nagura is audible at the end. I find those little stones to be almost more trouble than they're worth.
    It's curious that the Sigma Power Select II 6k couldn't cut it with this steel -- considering what those stones are sold for -- I'd have been most interested in seeing that combination of knife and stone in practice. Did you also raise a slurry on the 6k when you tried it?

    • @stefanwolf88
      @stefanwolf88  4 года назад

      First time using cleaning stone ever (usually just lapp with DMT plate) - grit contamination sounds probable. About the 6k Sigma - I have tried it with and without raising a slurry and the blade glides across the stone with little to no resistance - no steel particles were abraded.
