Hope you see something that you can cook up for your family and friends!
In this video, you'll see:
-BBQ Western Pork Ribs
-Corn Casserole with Chilies
-Hashbrown Casserole
-Potato Ham Corn Chowder
-Corn Muffins with Chilies
-Britzel Bars
Corn Casserole
1 can whole kernel corn, undrained
1 can cream style corn
1 box jiffy corn muffin mix
2 eggs
1 cup sour cream
approx. 2 Tbsp butter
Mix all ingredients together, except for the butter.
Bake at 350 for approx. 45 minutes until center is set & top is golden brown.
Dot top with butter after removing from oven.
**Add 1 can of diced green chilies for an added flavor boost!
Hashbrown Casserole
Mix together:
32 oz bag frozen shredded hashbrown potatoes
2 cans cream of chicken
1 medium onion, diced
2-3 cups shredded cheese
Bake in 9x13 greased casserole dish and bake for 45 minutes to one hour.
Corn Muffins with Green Chilies

Here's my recipe for Potato Ham Corn Chowder:
1 med. onion, chopped
6-8 med. potatoes, peeled & diced
2 cups ham, cubed
2 tsp. garlic, chopped
1 can whole kernel corn, drained
1 can chicken broth
4 C. milk
salt & pepper to taste
*Amounts can be adjusted according to the amount of chowder you are making or to what your preferences are.
This can be made on the stove top or in the crock pot.
Britzel Bars
1 sleeve saltine crackers
1 cup butter
1 cup sugar
1 bag chocolate chips
On a baking sheet covered with foil & sprayed with cooking spray, line all the saltine crackers.
In saucepan, bring butter and sugar to a boil.
Boil 2-3 minutes until mixture gets thicker & golden in color.
Pour evenly over crackers.
Bake on 350 for 10 minutes.
Pour chocolate chips over top immediately & smooth over evenly.
Let cool completely then break into pieces.

I was hungry for it! And honestly, I’m ready for it again! I don’t know why I don’t make it more often.
That’s the way I make my hash brown casserole except mine calls for sour cream. It’s my son’s favorite dish with ham.
I’m sure that’s good added in!
Your food looked delicious. Maybe you could try preheating your muffin tin with some melted butter in the bottoms to get them more crispy?
That's what I was thinking as well. Ans remove them from the pan after 5 min of coming out of the oven so they don't build up steam.

I use Jiffy Mix, but to get a crust, this is my method. While my oven is preheating, I put bacon grease (amount of your choosing) in the baking dish. It melts and gets hot, so when cornbread mix is added, it gets a pretty decent crust.
Bacon grease for the win! I’ll definitely do this method the next time. That’s what I do for cornbread in my iron skillet so surely it’ll help with the muffin tin! Thank you again.
