The encounters with Schwarze and Gault are both almost certainly canon. Schwarze because of them chasing Wolfgang Buchner (Huckebein, the same one who became Peter N. Beagle AKA Pops in AC5) into the Round Table and an easter egg on Ace difficulty where Ashley Bernitz (Grabacr, and the future leader of the aggressor squadron named after his callsign) shoots down both Buchner and Heartbreak One (Jack Bartlett, the future leader of Wardog Squadron), consistent with AC5's established lore. Gault because Anton Kupchenko (Gault 1) is arguably the principal figure behind all the events leading up to and during the Belkan War, as well as the founder and director of A World With No Boundaries, on top of the fact that he was found KIA in B7R after the coup attempt. The only encounter where it's ambiguous as to which squadron was present is Mission 3, since there are no lore bits that strongly support any of the three that can be encountered on that mission.
