In New Orleans, we have a sizable Vietnamese immigrant population. The Vietnamese population here runs restaurants that serve surprisingly authentic food, and this has worked pretty well for us. The "po boy" and the bánh mì use the same suppliers for their "French bread," as we call it. We have the same history of French colonization and the same love of spicy food.
We also have Vietnamese immigrants in Russia, specifically in Moscow and St Petersburg. They run Vietnamese style restaurants but oftentimes they modify the meals making it more suitable for the Russian taste. Less spicy and overall slightly less flavourful
I absolutely love Vietnamese cuisine. There is a large Vietnamese population in Louisiana where I use to live and I miss it so much. Glad to see you doing well
The dark sauce at phở places is similar to a Chinese hoisin sauce (if not just hoisin) and the most prominent spices in phở are usually anise and cinnamon. Some places spice very lightly while others go pretty strong. I prefer stronger, but light is fine too. And I LOVE Thai basil (though sometimes also called Vietnamese basil in Vietnamese places). I also love getting Vietnamese vermicelli noodle (bun). It’s amazing how such a pungent thing as fish sauce can be amazing when sweetened.
The garnish/seasoning vegetable you didn't know the name of is Basil. In Europe and the US we generally use sweet Basil, but Asian or Thai Basil looks much the same but has a more peppery flavor with a hint of mint-ness.
Thanks so much for showing bun cha Ha Noi. It's one of my favourite meals. We have a sizeable Vietnamese population in Portland Oregon and many restaurants. I can find the beef stew but it is always thicker than what you showed us. I am on the hunt for a really good yu tiao. I have to compliment you on your English fluency which is much improved. I imagine it helps to have English-speaking roommates! You look happy and healthy. I'm glad you're enjoying life in a beautiful part of the world.
Thank you! Bun Cha Hanoi is one of my fav meals too, and I haven't seen that before visiting Vietnam! There are lots of Vietnamese restaurants in Russia (run by Vietnamese) but Bun Cha Hanoi isn't on their menu

Do you have any problems with your tummy when eating out? Do you have to boil the water and cool it down before rinsing vegetables, brushing teeth, etc.
No issues with that for me. I never drink tap water but it's good enough for rinsing things and for brushing teeth and face. What I personally do (and what people usually don't) is I use bottled water for my tea and coffee and soups, but it's just a personal preference.
