That's what it's all about, right there. Camping with the family, enjoying each other's company in the great outdoors, and sharing a delicious meal TOGETHER. Was proud to see no cell phones taking away from the beautiful memories you are creating for that precious little girl. Is good to see a young couple doing this sort of thing.

You don't need a pizza stone. The cast iron evenly distributes the heat just fine.
You might consider making this recipe in a (camp) Dutch Oven over a charcoal fire. Just prepare everything the way you did with all of the coals underneath the Dutch Oven, and when you are ready to bake, just put the lid on the Dutch Oven, and transfer most the charcoal to the to the lid.

Pick up some terra cotta tiles at a home improvement store; three of those should help your camp oven.
Exactly! It's what i use in the house too. Mine are about 16 inches square and only cost a few bucks. A far cry from the cost of a pizza stone

Caroline is getting so big. Such the little helper. I loved it when my daughter started cooking. She's 19 now and cooks me dinner and brings it to me at work. You are training her well Sara. Looks delicious, we will have to try it this week.
We do frirattas all the time, at the house, when we are camping at our property, and when we are overlanding. Always an easy favorite.
Jeremy Patrick and then there are those talented people that can hold two eggs in each hand, crack them, and separate the egg shells, letting the four eggs drop into the bowl all at once.

Enjoyed your video and it's nice to see families still camping. Your little girl is a pro at breaking eggs. We are 65 and have tent camped all of our life raising three kids. We had that same Coleman oven in 1972 and recently had to throw it away because of rusting too bad. Happy camping!
Sarah, great inspiring cooking. We also do not compromise on food when overlanding. One comment... when you drag the food from the cutting board to the pan, use the back side of the knife. :). It keeps the knife sharp.

That’s something I have cooked before but not camping. In my cast iron skillet. That is the only way to get the crust. Plus I have never used can potato. I will try that. Using your leftover taco fixings works great too.
I love how your daughter helped you. I miss when my kids helped. I laughed when you gave her a taste and at first she looked like she was unsure about it then started shaking her head yes. I think camp cooking was one of the funnest parts of camping.
I make this all the time. Great recipe and demo. I love adding fresh peppers (green, red, yellow) with the potato and sour cream as a garnish at the end. Mom good!

Tried this for breakfast today. We don't have canned potatoes in this part of the world, so I replaced it with frozen hash brown. Works out very well!!! Love the simplicity of the recipe.

If you want a “pizza stone” to fit our camping oven you could use a ceramic floor tile or two. They work fantastic and if you break one you out $1.50.

Ok, late night can’t go to sleep watching RUclips videos. This came up and hit a winner. Had to subscribe. I can do this and have been looking for a simple one pan breakfast idea. I love canned potatoes, have not had for a long time and have a good well seasoned iron skillet sitting lonely in the cupboard. Thank you.

Try it with polish sausage in stead of bacon. We made that on a camping trip over 30 years ago because it was our last day and we were out of bacon. It became one of our favorite breakfasts. But I am sure you know about substitutions when camping. I am going to try your recipe as I love quiche but hate pre baking the crust. Thanks. Mary

Little tip, always pour the cheese into your palm rather than reaching into the bag. It helps keep it from molding.
Dutch oven Mountain Person Breakfast. #12 oven with coal lid and legs.
load a charcoal chimney starter and light. Fill oven with: diced (3/4')
potatoes, Ham (precooked sausage, bacon, ground beef or without ) and
onion.(frozen O'Brien Potatoes work great, just thaw before) Season to
taste, crack a dozen large eggs and scramble, pour over potatoes.( If
you have a steel chicken feed pan, they work great for Dutch oven
cooking, protects from wind a reflect heat back to oven, makes charcoal more efficient.)
place 9 coals under the oven and 15 on the lid...this will be
about 350F. Bake for 40 minutes (rotate lid 1/4 turn every 10 minutes),
blow away ash, remove lid and cover with your favorite cheese. add more
coals if needed ( hold your bare hand over the lid 4" away, if it gets
too hot in 4 seconds that is 350F. If you can hold your hand longer it
needs more coals. put a couple underneath too). Bake another 15 minutes
till cheese is browned and center is 180F. Recipe from University of
Scouting class I took years ago. Knot tying on my channel

Everything from the farmyard that the generations before us dreamed of when it wasn't available in wartime, and when it was they're now living forever. Dairy, pork, onions, potatos, herbs, I'm salivating and that's in the book for the next weekend in the wilds, 0700 breakfast and no desire for mates and I to eat for another 12 hours. No oven, but guessing a large biscuit tin will do just the same job.
You know is so good to get out there in these stressful times even if its just for a few hours ,I went up to pejar dam, made a fire put on some coffee, put my cast iron pan in the coals cooked some onions and thin steak for my girl ,I pan fried a "Indian egg sandwich" I made at home for myself, It was a Fun afternoon and went home when the rain came , It broke up another Dull Week,

Buy the sliced potatoes, and please use a silver knife or spatula when dividing it. Running the knife across the cast pan will dull it badly. But I have made it and it is delicious, happy camping !
We make something similar to this in our Dutch oven. Cook potatoes set aside or cook night before, cook sausage then put potatoes, eggs in cook until the eggs look almost done stir a couple of times put biscuits on top cover back up then when biscuits are brown put cheese on top then cover back up just enough to melt...boom mountain man breakfast. Serve in bowl or tortilla with salsa. Mm mm good.

Nothing like camping out with the family. I always went camping with the girl scouts or a friend's family. My parents did not do too much with my sister and I. Then they split up when I was 8 yrs. of age. My sister was 5. They are all gone and I am the only one left. Never married and no children. I missed out on that. Keep doing what you are doing!

I also have used can potatoes to fry for breakfast, but I found out if you were to rinse off the potatoes (rub them too) before frying them, they'll fry up and brown so much quicker and mo'better..
Canned goods have BPA......slice potatoes at home put in water to cover.......drain, dry and fry.....campers delight!
I'm glad this showed up on my feed again tonight....with my girlfriend coming to spend the Thanksgiving holiday with me, this will be a perfect breakfast dish a couple of mornings. I made it once before and.....DANG, it's super good!! Caroline approved....what more needs to be said???

Try firebricks if you can't find a pizza stone. They are smaller and you can piece them together an cut to fit exactly.

we picked up a square pizza stone from Walmart.com.....worked perfect to keep even heat in our camper oven...and fit just right. Looks to be a similar size to what you have.
Add a Dutch oven lid to your gear and you can get rid of your tin oven . At the point you put it into the oven you could have covered it with a hot Dutch lid and a couple of glowing brackets - great video- everything tastes better out side ! Really looked good ! But your right - presentation is every !
Real fires aren't allowed many places in the southwest so we stick with gas. 👍

That looks GREAT! One of my colleagues at my fire station used to make something similar to this with stuff left over from the previous day's brunch. (hash browns, bacon, sausage, etc.) A pretty tasty breakfast after a long night. Anyway, YOURS looks better. I'm going to try it. Thanks for sharing! Awesome!

I love the look on Sarah's face when she says moment of truth time. She is such a great camp chief. I really like the fact that you guys will actually taste the food before giving it the ooh or an ahhh. Makes it so much more believable. Oh yum oh yum - planning a trip to Botswana in the winter of 2023 - (our winter not yours) and this is going to be on the menu. We ordered our oven after one of your other videos a while ago (along with the Get Out Gear down duvets) so thanks for the recommendations. I have done roast chicken in my oven a couple of times and I use it to heat up various pre-cooked meals. In fact I ditched my porta-loo in favour of my oven !
I use can potatoes all the time. @ 50cents a can and its about the size of normal one potato, so easy and fast looks yummy
Hi guys, I would recommend using the Tefal Ingenio pans. None stick, removable handles for your oven, plastic lids for storage of excess food, stackable and great sizing. We use them all the time and use our Weber Q as an oven. BeC.
