Simply add a bridge rectifier for each piezo, then connect them in parallel(positive to positive and negative to negative). Add a 4.7uf 25v capacitor. I don't have a diagram. Actually, no need a capacitor for this project.
Bridge rectifiers have 4 terminals. Two for AC input and other two for DC output- (one is positive and other one is negative). Just connect positive to positive and negative to negative.

which model of diodes have you used in the video?

why you cannot use a single bridge rectifier instead of using as many as piezoelectric?
You will get more voltage out if you use one bridge rectifier the diodes take 0.2V away from your total.
