You can practice "stuns" with swap hiting on the second hit in normal combat (probably with a kb sword so you can clearly see if you did it). For "slam stunning" you just do ^ but while falling with a mace, just note that this isn't that practical since there are many ways of avoiding slam attacks or even outright preventing them.
