Cooking oil
1 tablespoon Sichuan peppercorn, crushed
2 tablespoons minced garlic
1 piece onion, thinly sliced
½ kilo ground pork
¼ cup fermented beancurd (spicy)
2 tablespoons chili paste (chinese style)
Dried mushrooms, as needed
Water, as needed
White sugar, as needed
Slurry (water with cornstarch)
2-3 pieces red chilies, sliced (optional)
2 squares tofu, cut into cubes
Leeks, sliced†

I always toast the Sichuan peppercorn before grinding it. That looks fantastic, chef RV. Having this with riced cauliflower for dinner tonight. Tfs

Hello Chef RV, thanks for this very delicious Chinese dish Mapo Tofu and that's right Szechuan Dishes are spicy dishes from Sichuan Province of Southwestern China according to my awesome Chinese-American friend Jane W. she's originally from mainland China and just like you Chef RV I also love Chinese Spicy Foods too as well !!! 😃👍😋🍲🥢🍜❤........Actually as of now, there's a lot of different kinds and brands of Moon Cakes here in our Chinese grocery stores and also some of this Moon Cakes are even sold in Costco too as well for the Chinese Moon Festival ( Sept. 29/2023 ) !!! 😃👍🥮😋❤.......Love & Greetings from NYC !!! 😃❤

Chef if I may suggest po you may also fry the tofu just enough na hindi siya naduduruog. You may also used gulong canned product na heu ko ma chiu. Meron online. Mas maacentuated mo po yung flavor and color ng chilipaste. 😊meron din po sa mga arrangue market or mga supermarket sa binondo

If you happen to be in New York City, try Peppercorn Station. I’ve tried the best mapo tofu there.

Mukhang Le Creuset din yung Chef RV pot mo. Collab yan? Gustong-gusto kong gumamit ng mga cast iron cookware for recipes which requires braising or simmering kasi pantay ang heat distribution sa mga ganyang nilulotoan.

Sichuan pepper causes a tingling numbing effect in the mouth. Some people may not like that surprising effect. I myself was surprised the first time I used it in my dish. I think I added too much 😅

Puwede rin naman to choose one of the listed pampa anghang and then use qty acc to taste... or eliminate any anghang altogether...possibilities are there to adjust
