I made and freeze dough about a month ago. Today i bake pizza but the dough neither rose well, nor spongy at all rather its hard and chewy.. what could be the reason for that?

If the crust is too thin and not kneaded well then will it be very hard and if the crust is thick and not kneaded ⁹ will it be too soft like bread ? How many grams of white flour is required to make large pizza ? And the amount of yeast ? Should we use cold or warm water or normal room temperature water for kneading ? What should be the max time to bake and not more than that or less than that so that our pizza does not become too soft unbaked or too hard baked or burnt ...soo please advice clear the doubts and quarries and give us tips tricks and techniques
Couple of questions: 1. I have Weissmill Instant active dry yeast. Can i use the same quantity you used? 2. Can we make the pizza bases and freeze them or should we prebake and freeze? If so, can we straightaway remove them from freezer ,add veggies and bake them? If so, how long should we bake .

Corn meal is best as it does not stick to the dough. To make corn meal just grind some popcorn kernels and sift them. You will have corn meal
