I moderate large games pretty often (My largest over 30 people) and my biggest tip is to keep a notes so you don't forget to wake up any roles, and you don't forget who is supposed to have died that night. It also helps so you know who is what role so you don't have to wake up a role that is already dead.
A year ago, I played a game with over 50 people. We used different games and extensions to have enough cards. And even then, the game wasn't boring. We had the best moderator ever!
