I was planning to do the same on my iMac however, looking on the OWC website they have an SSD driver upgrade kit that comes with a thermal sensor it plug in between the drive cable and replacement drive to prevent the internal fans from running full speed. did you have this issue when you've done it on this Mac? Because I definitely did not see you put a thermal sense on?

that would make more sense, that way you get far superior reads and writes and use the sata harddrive as storage. might do that on my 2017 5k imac.
2019 iMac not need upgrade to 128gb ram.i tested many time 64gb ram more smooth then use 128gb ram with same performance.
