not sure why anyone would want a toilet positioned exactly there

Because that's where it fits with the least compromise... Can't put the shower there because then you couldn't access the rest of the bathroom... Can't put the vanity there because then you either can't easily access the toilet or can't easily access the closet... The toilet is the only thing that can be there and still leave the rest of the bathroom easily accessible and usable...
