Stuffed brinjal fry/Guthi Vankaya Velluli Karam:
Ingredients:
Brinjals-1/2 kg
Oil-3 tbsp
Coriander seeds-1/2 cup
Split chickpeas/chana dal-50 grams
Groundnuts-50 grams
Skinless split black lentils/urad dal-50grms
Sesame seeds-20 grams
Dry Red chillies-12
Garlic cloves
Salt-1 tbsp
Oil-3 tbsp

This is the closest, I have seen to what my mother makes, the taste is still lingering in my mouth, we used heavily stuff exactly the same masala, tie a thread around the brinjals and shallow fry it, so that all the water in the brinjal gets evaporated, and sprinkle left over masala, towards the end. It requires patience and time. This dish is a hidden Gem, might be lost with time.

Hi it looks very delicious! I tried to make but the stuffing didn’t come out powdery like yours. How did it come powdery because when we put garlic it doesn’t 🤔
They used more ground nut and other dal. Used less garlic. So that it will come as a powder texture

I recommend intially to soften your brinjals,if not the stuffing gets burnt in the process of softening the brinjal...happend with me.

Complete disaster of course...I wud say this is just another way,but not gutthi vankaya fry...With so much oil Naah...not impressed.Also Why are you using a stainless steel spatula to use it in a non stick kadhai..Look at the condition of that kadhai :) You have taken all the coating off from that kadhai and still using.No wonder if you use stainless steel spatulas for non stick kadhai it is not at all good-
