I used to have to make 12 lemon tarts a day when I worked at a 2 rosette (we had too make it in pastry rings) and I have been looking for a decent enough vegan alternative for a while now and I must say I prefer yours than the dairy equivalent! And yours has a lovely glossy top :) A couple of pointers though after boiling skim the top this prevents any bubbles in the mixture and wait until it’s lukewarm to pour the mixture in the pie crust (just decreases the risk of a soggy bottom)
Wow, looks so delicious! I would suggest another type of decoration too. Have you ever tried vegan meringue? They are just as tasty as the regular ones and look fabulous on any type of desserts.
I have tried it with a 20cm diameter tart mold but had a little left over so I made an extra tart on a muffin cup. Just remember that tart molds are not as deep as regular cake molds, hope it helps!
125 ml is almost identical to 125 grams and that’s a very similar amount to the amount of butter you put in crust it’s a possibility you may of accidentally overworked it or maybe had an equipment malfunction crust worked rather well for me

You could just try and make the vegan version , that way you would reduce animal suffering at least for one dessert.

The measurements for the crust are wrong. 125g of coconut oil is way too much. Unless you mean 125 ml and not grams. My crust is ruined😢

Tried this recipe crust with oat flour - total bitter bullshit 😅 don’t repeat my mistakes
Try coconut or chickpea flour :)
