It’s always a great time saver to have pre-cooked vegetables on hand because you can quickly prepare something tasty with them, such as sandwiches, side dishes or pasta toppings. I always prepare my vegetables in the oven. Be sure to try this recipe. You won’t regret it 😉.

Here are the ingredients:
2-4 aubergines
3 red Peppers
8-9 green peperoni
3-4 carrots
10-12 small potatoes
1/3 cup olive oil
1 tablespoon tomato paste
½ teaspoon balsamic vinegar
½ teaspoon soy sauce
1 teaspoon Italian seasoning
1 teaspoon black pepper
1 teaspoon salt
3 cloves crushed garlic
Preheat the oven to 360°F/180°C
And bake the veggies for 35 minutes
(After the first 15 minutes mix the veggies gently)

Measurements
I mostly use cup as measure. If you have a cup or a glas that also measures 250ml, you can always use that for measuring. For certain finished products and baking recipes, I always write down the grams also.
1 cup = 250 ml
¾ cup = 175 ml
½ cup = 125 ml
1⁄3 cup = 80 ml
¼ cup = 60 ml
2 Tbsp = 30 ml
