Great video! I wonder if you put the metal bracket on upside down. It looked like there was a notch in the middle of the bottom opening and two towards the corners of the top opening. If rotated 180°, it might line up with the metal spring holders.
I took your advice on the sausage makers 25 pound sausage stuffer. While a bit expensive, I’m really excited! I can’t wait to start making sausage. I’ve always needed help to make sausage, now I’ll be able to do it by myself. So I can play around and experiment a lot more.

That is for 3 pounds of meat. for 1 pound of meat I use: 1 tsp kosher salt 1 tsp SavorYE 1/2 tsp black pepper 1/2 tsp garlic powder 1/2 tsp onion powder
I remember looking up how much a kamado costs when I saw you cooking some sausage a few years ago. I couldn't believe how expensive they were. Little did I know that I'd eventually own one - albeit a generic version. I think I use it nearly every day now.
