Why is the first touch an overhead pass?

In the rally you can overhand set on the first touch 0:24, as long as it's clean (no double contact and minimal spin). and you can recieve the ball overhead if it is considered hard driven, ex. if you're peeling off the net you can have your hands up ready to recieve the spike. 0:18
