    Of course I remember life whitout internet..no mobile phone, just house phone. And you know what..it was not bad at all. Today you can not live whitout your mobile phone, internet..but it is becomeimng too much. Thank you for this video, you are just adorable person..hugs from Croatia😊

    What a fantastic video! I remember life before the internet! Phoning from the states to the UK all the time. Eventually, email became more widely available. I learnt to type on an old fashioned type writer!! The fudge looks delicious. Did you know if you scrunch up grease proof paper completely and then flatten it out again it makes it much easier to get into all the corners! X

    I love Nigella too (as my family could all tell you)! I have almost all her cookbooks and I watch her old Christmas shows every year (when I can find them). I have made her mini mince pies for a few years now and they are awesome! I also have made this fudge several times and it's a go to in our family. I like your spin on it and will have to try that next time I make it. Thank you for all your encouragement - you have really been a lifesaver for me. And if it makes you feel better - I am almost 55. We're just getting better with age dear.

    Oh my word! This looks fantastic and is now on my holiday to do list🎄 40 years ago during our first married Christmas I tried to make fudge. It cooked it and boiled it, was worried it wasn’t “ soft ball” yet, so cooked it more. Poured it into a pan and into the fridge. When Dear Hubby came home I was so excited to give him so fudge. I dumped the block out and it was absolutely petrified! It could not be cut, or broken . I even tried a hammer , lol. Into the trash it went and is probably still a chocolate brick in a dump in Pennsylvania to this day. I have not made fudge since. Your recipe looks wonderful and I will try after 40 years😊

      LOL! Yes, this method is SO much easier...just melt, stiry and leave to set in the fridge. Bingo!

      Diane-made this last night and it didn’t set in fridge. After couple hours I put it n the freezer. It’s delicious but mine didn’t cut cleanly like yours. My hands were a Chocolaty mess while handling. Should I have cooked it longer than the melting stage? I make pralines and other candies but we’re subtropical and I’m thinking I probably should have cooked the mixture a little longer. Anyone have any suggestions?

    Adding this to my shortbread/gingerbread gifting Diane! Perfect! And yes! Best of all EASY!!
    Yes... those days of carbon and manual typewriters weren't so long ago... technology has moved way too fast..
    I remember having to hand draw all our architectural drawings on a massive drawing board and having to hunt down special printing stores to print out A1 paper... Oh boy and if you made a mistake... it was a nightmare.. not to mention the time it took to redraw... Well all computerised now... you don't even have to use maths to work out the scale and dimensions.. programs do it all for you... I had to get lessons as an adult to keep up with the times.
    I think our generation has seen it all... so many changes in lifestyle and work and family life..

    Great pistachio trick Diane.. love pistachios straight from the shell and those stubborn shells do drive me batty! :)

      Yes!!! My friend is a teacher at our architect college and she says the young people can't draw houses by hand any more...only using a computer! 😝

    That method of fudge making works well in the microwave as well. (1 minute on high then stir microwave for 15 seconds and stir until melted)

    I have made this 2x so far! Terrific and a great gift. I made it using sugar substitute Lakanto Monk Fruit which worked perfectly. I made my own condensed milk--using the Lakanto as well. It's not that hard! Next I hope to make it with coconut cream instead of condensed milk. The recipe makes a lot of fudge! Thank you so much. Love your channel.

    Love your stories! Yes we had our own phone line but knew plenty with "party phone line" so funny! Even thou you are in different area of the world same memories! Loved the sound of a typewriter!

    I'm going to try this recipe! I tried your cheese shortbreadbiscuits the other day - they were delicious. I noticed that your pistachios are from Lidl, I love Lidl!!!

    Thank you for mentioning the option to convert the recipe. Here in the states both ounces and grams are listed on food packages but it’s much easier to have it the way I’m used to reading a recipe. This sounds delicious 😋

    Love this video. Love fudge and will definitely be trying this one too. Great idea to add cranberries. It was so fun listening to you share about the typewriter. It brought back memories for me too. I went through the electric typewriter stages and boy the horrors of carbon copies. Then we got the typewriter that had a corrective ribbon built in. Oh happy day!! Ya life was suit and simple. Have a great day and enjoy your fudge.

    I remember the shared telephone with the house next door was called a party line. When I started work at 15 we used manual typewriters, they were great, with a ribbon of 2 colours top black bottom red, you would use the ribbon forever until you wore a hole in it then you would change it, you’d also have to clean the letters (keys) where they would get clogged up with fibres from the ribbon, you used a typewriter rubber/eraser instead of tippex. Great days.

    Funny , my husband used to have some condensed milk with water too when he was a little baby ;)
    , it is written "gloria milk" in his health book ;)i learnt at school to write letter on a mechanic writer machine !!!

    In America a BIG Big Brand that is so Popular partly because it’s Grass Fed Cows ! Is Kerry Gold ! We’ve used it for YEARS ! Irish ! I Wonder if your Danish Kerry is the same brand just Danish made ?? We’ve not seen well, me here in America ! Makes me so want to try !!!!

      Debra Lunnen I think Kerrygold is a brand name for the Irish dairy board. Kerry being a county in the south west of Ireland.. the brand is popular in the states.

      Hi Debra, our spreadable butter is Danish and is from the brand called "Kærgården" (so nothing to do with Kerry Gold) But sounds kind of similar! LOL

    Funny remember those days well. I had thrown carbon papers in the trash and my boss emptied his ashtray with his cigar in my basket and there was a lit ember and whoosh a fire. The overhead sprinkler system went off and we all looked lime drown rats.😂

    Could anyone advise me re using rice cooker. I use half rice to water but my white basmati rice comes out over cooked. I follow instructions for rice cooker to just switch it on and when cooking light goes out to leave rice in the pot for 10 minutes. Any tips greatly appreciated. Keep up the Xmas cooking videos Diane, love them.

      Hi Mandy! Does your rice cooker have measurement markings on the inside of the cooking pot? With mine, I put in two measures of rice, then fill up the cooking pot with water to level 2. (Not half rice to water.) See if your rice cooker is the same and let me know if that helps!

    Sweetened/condensed milk, chocolate and butter is the exact way I've been making fudge for years. No recipe given. Just a 'my mom made it like this' from like ten generations back from England somewhere.

      I only use it for making desserts (this can was getting close to the expiry date, that's why I wanted to use it up now) 😀
