That looks ridiculously good.
Much easier to pull the skin off the dark side before filleting and less waste or chance of cutting away good flesh if you just pull the skin off

So, at 4:43, she places a fillet with others and mentions that the process is repeated with the other four fillets. Usually, to my knowledge as a chef with over 50 years experience, there are only four to any fish.
The was not the only fish she did
The timestamp is wrong and she probably meant other 3 and btw u should clarify only flat fish have 4

using metal utensils in a non stick pan, thats a huge no no for me.
You make this so difficult.... Just chop the head and the tail off... Skin both sides and cook it whole
